Portuguese Rice with Lima Beans


This is a very common variation of Portuguese yellow rice.  It's an easy way to add some vegetables to your meal. In addition to lima beans you could add carrots or peas.



Portuguese Rice with Lima Beans



INGREDIENTS:
1/4 of a medium white onion (finely chopped)
2 tbsp olive oil
a pinch of salt (a good sized pinch)
1 Knorr Chicken Bouillon cube
1 packet of Goya Sazon con Azafran
a pinch of pepper
1 cup of long grain white organic rice
2 cups of water
a dash of garlic powder
1/3 cup baby lima beans (can add more)


DIRECTIONS:
  • Add olive oil and onion to a medium sized pot (with a lid).  Add garlic powder and sautee until soft over medium heat.
  • Add salt, pepper, Knorr cube, and Goya Sazon packet. Mix well.
  • Add 2 cups of water and baby lima beans. Mix, and bring to a boil.
  • Adjust heat to low.
  • Cover and cook for 20 minutes.
