Crispy Chicken Tenders
This recipe actually was inspired by my favorite fish and chip recipe (Found here). I noticed that the fish had a very crispy coating that reminded me of the chicken tenders that you can find at just about any restaurant (particularly on the kids menu). I've been looking for a good crispy chicken tender recipe for a while so I decided to try making some chicken using a similar technique. This is definitely a kid-friendly recipe.
Chicken Tenders
Makes about 8 tenders
Ingredients
for the marinade
1/4 tsp salt
1 tsp Adobo All-Purpose Seasoning (with pepper)
1/4 tsp garlic powder
1/2 tsp cayenne pepper
1 1/2 lbs of chicken tenders
for the batter
1 cup all-purpose flour
1/2 tsp baking powder
a pinch of salt
a pinch of pepper
12 oz. beer
for the flour
1/2 cup all-purpose flour
1 tsp paprika
a pinch of salt
a pinch of pepper
for frying
1/2 cup canola oil
Directions
1. For the marinade: In a medium bowl, mix the salt, Adobo All-Purpose Seasoning, and garlic powder.
2. Add the chicken tenders to the marinade, cover the bowl with plastic wrap, and refrigerate for 1 hour.
3. For the batter: mix together the all-purpose flour, baking powder, salt, pepper, and beer until incorporated well.
4. For the flour mixture: In another bowl, combine the all-purpose flour, paprika, salt, and pepper.
5. Heat the oil in a large skillet. The oil is sufficiently heated when you stick the top of a wooden spoon in the oil and bubbles begin to form around the spoon.
6. Dip the chicken in the batter, shake off any excess liquid.
7. Dredge the chicken in the flour mixture.
8. Fry the chicken until golden brown.
9. Repeat steps 6-8 for the remainder of the chicken.
