A lot of Portuguese people serve rice with just about any meal. This is my family's take on Portuguese rice. It is a simple recipe, but it has gotten a lot of praise from others. We enjoy it with a variety of meals from pot roast to beans.
Portuguese Yellow Rice
1/4 of a medium white onion (finely chopped)
2 tbsp olive oil
a pinch of salt (a good sized pinch)
1 Knorr Chicken Bouillon cube
1 packet of Goya Sazon con Azafran
a pinch of pepper
1 cup of long grain white organic rice
2 cups of water
a dash of garlic powder
Directions
1. Add olive oil and onion to a medium sized pot (with a lid). Add garlic powder and sautee until soft over medium heat.
2. Add salt, pepper, Knorr cube, and Goya Sazon packet. Mix well.
3. Add 2 cups of water, mix, and bring to a boil.
4. Adjust heat to low.
5. Cover and cook for 20 minutes.
