A simple breakfast sandwich. This is great for busy mornings. You can easily adapt this to fit your taste. For me, I prefer the sandwich with a fried egg and no cheese.
Ingredients
5 eggs
2-4 slices of bacon(I used turkey bacon)
A dash of ground black or white pepper
2 tablespoons of half and half(more or less depending on your taste and how light you like your eggs)
2 slices of white american cheese
1 tsp of butter
Directions
To make scrambled eggs:
1. Crack the eggs into blender.
2. Add in the pepper and half and half.
3. Blend for a minute or so until the eggs are foamy.
4. Heat a medium size skillet on medium heat and melt the butter.
5. Pour the egg mixture into the skillet.
6. Once the egg mixture starts solidifying, use a wooden spatula to scoop the egg mixture towards center and continue to do so until the eggs are completely scrambled. Once the eggs are scrambled and almost completely cooked- they will look slightly moist, take them off the heat and let them finish drying/cooking for 1-2 minutes. Once the eggs are fully cooked place the cheese on top of the eggs and let it melt with the pan off of the heat, the heat of the pan itself is enough to melt the cheese.
Cook the bacon per instructions on the packet. I cook it either on a griddle or cast iron skillet. I however lately have been using the cast iron skillet, the bacon turns out crispier.
Assembling
Toast and lightly butter 2 croissants. Place the eggs on the bottom, place the bacon on top of the eggs and cover with the top half of the croissant.
