Bread Machine Pizza Dough / Pizza Bites



When we purchased our bread machine I thought it was just going to be an easy way to have homemade bread. Instead, it has proven to be a way to quickly mix up a variety of things. I like to keep a supply of pizza dough in the fridge for when we need something that doesn't take too long to make for dinner, but making homemade pizza dough can be a fairly tedious process. You have to mix the ingredients, knead the dough, and wait for the dough to rise. Using the bread machine streamlines the process nicely. You just add the ingredients and enter the correct settings.

I love these pizza bites because they are quick and simple. My niece loves them, and if you can get her to eat something I think any picky eater will approve. I like to change up the filling in these. Sometimes I do pepperoni and cheese, sometimes just cheese, and sometimes I like to put some chourico and cheese.



Pizza Dough

makes 1 lb. of dough (2 12 inch pizza crusts)

Ingredients

1 cup warm water
1 tbsp. honey
2 tbsp. olive oil (or canola oil)
3 cups bread flour
2 tsp. salt
2 1/4 tsp. active dry yeast

Directions
1. Add the water, honey, and olive oil to your bread machine.
2. Add the flour and salt. Make a small well in the flour.
3. Pour the yeast into the well.
4. Adjust your bread machine to the 1 lb. setting. Use the appropriate setting for kneading dough.


Pizza Bites

Ingredients
1/2 batch pizza dough ( 1/2 lb. pizza dough)
olive oil
parmesan cheese
pepperoni, sliced
mozzarella cheese, cut into cubes
sauce, for dipping

Directions

1. Preheat the oven to 350 degrees. Grease a baking pan.

2. Take the pizza dough and divide it into equal sized pieces.

3. Take a piece of dough and flatten it slightly. Place a piece of pepperoni and a piece of cheese in the center of the dough. Bring the edges up to the middle to cover the filling. Pinch the edges together.

4. Place the pizza bite in your baking pan with the seam side down. Repeat step two for the remaining dough.

5.  Brush the tops of the pizza bites with some olive oil. Sprinkle some parmesan cheese over the pizza bites.

6. Bake for 20 minutes. Serve warm with sauce for dipping.
